Instructions to make Naan bread:
- Combine dried yeast, honey and warm water and leave for 5-10 minutes until the mixture starts to bubble..
- Add flour and salt to a mixing bowl and make a well in the middle. Add melted butter, yoghurt and yeast/honey /water mixture and gradually work into a dough. It should be soft and sticky..
- Flour a surface and knead the dough for about 5 minutes until it feels smooth..
- Place the dough back in the bowl and cover with a clean cloth or tea towel. Leave in a warm place for 1.5 hours (I used a space near the boiler).
- The dough will have doubled in size - somehow really satisfying. Now ‘knock’ or punch the dough with your hand a few times..
- Divide into six balls and pull or roll each ball into an oval about 3 mm thick..
- Now comes the fast work. Heat a grill to very hot and place a rack close to the grill (leave enough room for your frying pan). At the same time heat a dry frying pan on the hob until it is very hot..
- Place one naan in the hot frying pan for 30 seconds and then move the naan in the same pan to under the grill for 49 seconds or until it rises..
- Turn out onto a plate and repeat until all the naans you need are cooked. (I saved three naan balls in the fridge for another meal).
- Serve with the curry of your choice..
